Noma to Expand With 108, a New Copenhagen Restaurant, in 2016

Noma has been one of the most influential restaurants of the past decade, but it has been just that: a single, exclusive, hard-to-book fine dining restaurant in Copenhagen. On Monday, the restaurant group made an announcement on its website, sharing details of its upcoming second location.

Next spring, in collaboration with the chef Kristian Baumann, Noma will open 108 (the name is pulled from the street address on Strandgade in the Christianshavn neighborhood). In a press release, Baumann explained that he's been working on the menu for the last six months, nurturing relationships with new farmers, and preserving spring and summer harvests to use next year. While René Redzepi's team sets up for their ambitious pop-up in Sydney, Baumann will be holding down the fort in Copenhagen, serving the first tastes of his brand-new dishes à la carte a few nights a week.
