Behind the scenes at the Rio Olympics, Brazilian catering company Sapore will be responsible for feeding more than 10,000 of the world’s best athletes. If it goes well, Sapore plans to use the Games as a springboard to more markets in Latin America and eventually, the U.S.
For Sapore, which operates in-house dining for corporations, the Olympic Games present out-sized demands. Company head and founder Daniel Mendez said its chefs will turn 210 tons of food into 17,000 daily breakfasts, lunches and dinners, plus snacks, all for elite athletes and staff members from a range of cultures. They will prepare meals across global cuisines, and offer kosher and halal options.
