Last week I went to a very expensive, very precious, very Michelin-starred Manhattan restaurant which shall remain nameless (except of course it was Eleven Madison Park). There were lots of root vegetables and unidentifiable essences, members of the service team kept popping up like Jason had planted dragon’s teeth, and I learned about something called tonburi: the caviar of the fields! Anyway, I’m sure it was a fantastic meal, and true gastronomes would have been thrilled at each and every one of the tiny little courses that kept coming and coming and coming.1
