Martin Kuczmarski is accustomed to considering the needs of tens of thousands of customers when he thinks about hospitality. As the former chief operating officer of Soho House & Co Inc., he oversaw the group’s expansion from a handful of clubs to a globetrotting empire.

These days, Kuczmarski’s detail-oriented focus is smaller, at least for now. Two years ago he quietly opened The Dover: the softly lit, American-Italian dining room in Mayfair, with a menu of crowd-pleasing dishes like spaghetti and meatballs, which quickly earned an ardent, not to mention star-studded, following.
