Rest easy, pancake eaters. Even though Canada’s maple syrup output tumbled 22 percent to 9.8 million gallons in the season through May -- the smallest harvest in three years -- a shortage of the golden liquid is unlikely. The Federation of Quebec Maple Syrup Producers, a government-sanctioned sales agency that sets prices for most of the world’s syrup, can tap its strategic reserve to ensure consumers won’t run out.
