Lee is a co-chairman of Henderson Land Development, the publicly traded real estate conglomerate. His elder brother Peter is also a co-chairman of the company.

Lee was born to Lee Shau Kee, the founder of Henderson Land Development, in 1971. He returned to Hong Kong and joined Henderson as his father's personal assistant after college graduation in Canada.
He became an executive director of Henderson Land Development in 1993 and served as the vice chairman of the company from 2005 to 2019. After his father's retirement in May 2019, he and his elder brother Peter were appointed as co-chairmen of the company.
Lee Shau Kee wrote in a memoir distributed to guests in Henderson Land's 2019 shareholder meeting that he "firmly believes that under their leadership, they will be able to lead the group to continue to reach new heights."
The brothers were also appointed as co-chairmen in companies within Henderson Land Group, including Hong Kong and China Gas Company, the largest energy supplier in Hong Kong.
Lee Shau Kee died on March 17, 2025 at age 97.
