Mary Ellen Angel is an expert at mixing a Southside. The blend of gin, lime juice, and mint, with a splash of simple syrup, is a bestselling cocktail at Angel Share, her congenial bar in downtown Houston. The drink, which goes for $12, does more than deliver a well-balanced, citrusy-sweet blast of booze. It also helps support a local charity.

For every drink or dish bought at Angel Share, customers get a ticket and a chance to vote for one of four rotating 501(c)3 nonprofits. The charity with the most tickets at the end of the month gets the bar’s profits, minus operating costs.
