A Chocoholic's Tour Of Belgium

The Aztecs, who used the cacao bean to make thick, hot drinks, get credit for inventing chocolate, which they called xocoatl. The Swiss figured out that the beans could be roasted, ground, melted, and mixed with cocoa butter into a handy-to-eat bar. But it was the Belgians who came up with the the praline, a chocolate stuffed with creme fraiche, cocoa butter, mocha mousse, and other delights. And that may explain why many chocophiles say Belgian chocolates are the finest.
