The McIllhenny Co. of Avery Island, La., has been making Tabasco (from Tabasco peppers, vinegar, and salt) since 1868, when Edmund McIllhenny first started selling his spicy sauce. The privately owned company is still run by the McIllhenny family. While most of the peppers are no longer grown on the island, all the seeds are still grown there. Tabasco sauce, which comes in a range of flavors, accounts for almost 18 percent of total U.S. hot sauce sales.
