New Jersey transplant Ben Canter opened his now-famous delicatessen in the predominantly Jewish neighborhood of Boyle Heights in East Los Angeles before moving to the city's Fairfax neighborhood in 1948. Open 24 hours, Canter's is famous for its Canter's Fairfax sandwich (1/2 pound of corned beef and pastrami), chicken matzoh ball soup, and Hollywood clientele (from Jack Benny to Frank Zappa). Canter's expanded in 1961, adding a cocktail lounge called the Kibbitz Room. In 2003 it opened a Las Vegas location in the Treasure Island Hotel. Today, Canter's still makes pickles on site, bakes its own goods twice a day, and prepares proprietary potato salad, cole slaw, and egg salad. The LA institution says it sells over 4,900 pounds of pastrami a month and makes 1,500 gallons of chicken soup per week.
