Cotton Candy Sashimi

For the second shima aji course, Liebrandt places a slice of striped jack inside cotton candy that’s garnished with pansies, johnny jump up flowers, garlic mustard, lemon balm and fleur de sel. It’s a carnival-esque analogue to the sake-miso marinades the Japanese use to sweeten oily fish like black cod.
