Not a Hamburger

Parm doesn't call it a hamburger. The official title is patty melt. But this is a burger, perhaps the city's best. Chef Mario Carbone slow cooks dry-aged ribeye trimmings in a bath of butter, Worcestershire sauce, thyme and garlic. It's served on rye bread with Thousand Island dressing. Available only on Tuesdays, for $25.
