Rigatoni alla Carbone

Carbone, an Italian-American hotspot in Manhattan's Greenwich Village, has taken rigatoni alla vodka, the gluey bane of banquet hall dining, and turned it into a spicy, fatty, acid-balanced dish ($26). Expect all the flavors of Buffalo wings (minus the chicken) deconstructed into a Michelin-starred pasta.
