The Chef, Part I

Kamilla Seidler, previously of Geist and Mugaritz, is the co-chef at Gustu. The Danish-born toque is also responsible for training Gustu's 30 young cooks and service staff, all of whom come from low-income families. Gustu doubles as a cooking school for these young Bolivianos, and Meyer hopes the next "Gaston Acurio" might emerge from his kitchen.
