Gustu's tasting menu may include a chicharon over farmer's cheese and purple corn puree, which is a fancy way of saying pork rinds and dip. The menu also might include gumdrop-sized pink potatoes finished with slices of aji amarillo "paper" and Bolivian chuno, a freeze-dried potato whose scent can evoke a good coconut. Two takeaways: Bolivia has enough potato dishes to put most American steakhouses to shame, and second, this dish wouldn't be out of place at a two Michelin-starred restaurant.
