It was 2008 and restaurateur Drew Nieporent and chef Paul Liebrandt couldn’t have opened Corton at a worse time. The Tribeca-based ode to fancy French food, in the old Montrachet space, debuted in the months following the collapse of Lehman Brothers and Bear Stearns. Nearly half a decade later, Corton is one of the city’s best restaurants, a bold argument for the expensive comforts of fine dining in a downtown dominated by stripped-down casual spots.
