Pork Fat

Hanjan is where Hooni Kim, the chef behind the Michelin-starred Danji, serves his excellent Korean drinking food. Among the best dishes are these incendiary rice cakes with pork fat, fish cakes and chiles. Quell the palate with makgeolli, an excellent fermented mix of rice, wheat and water. I suppose this is what horchata spiked with beer tastes like.
