Torrisi Italian Specialties

Mario Carbone and Rich Torrisi brought their French fine dining background to Italian-American fare and the result is one of New York's best restaurants. While other chefs braise short ribs to medium-well, Torrisi slow cooks them to medium rare and then puts an expert steakhouse char on the silky meat.
