Maison Premiere's Seafood Risotto

At Maison Premiere in Williamsburg, Chef Jared Stafford-Hill cooks up a warm plate of Vialone nano rice in a rich shellfish stock. He adds warm crawfish and bay scallops to play against the cool funk of Maine sea urchin. He calls this dish "seafood risotto," but it's really just great gumbo in fancy pants.
