Harold Dieterle, the Long Island chef who won the first season of Bravo TV's top chef, runs a restaurant called The Marrow and, true to form, one of its best dishes is the bone marrow. He brightens up the warm, gelatinous goo with sweet, soft sea urchin, a perfect marriage of slimy textures.
