Trickle-Down Cuisine

The Wagyu at Roberta's in Bushwick has never been a traditional meat course in that it's always been just as much about the vegetables as it is about the steak. Chef Carlo Mirarchi and chef de cuisine Nick Barker, a Manresa-vet, have been expanding the protein-seasoned vegetables at this a la carte venue, with offerings like cabbage dotted with surf clams or eggplant with tonnato sauce.
