For Beginners

Corton’s first round of amuses, (counter- clockwise from top left), are an arugula lemon financier, a mornay-filled sachet, house made XO sauce, a sea buckthorn and carrot tuile, a kaffir lime meringue and a clam chowder croquette. The one bite morsels aren’t so much palate teasers as they are an immersion course preparing your palate for the hyper-complicated cuisine of Paul Liebrandt.
