Inside the ravioli there are three textures of chestnuts: chestnuts cooked with fresh ricotta, fire-roasted sliced chestnuts, and chestnuts cooked with the mushrooms. "So it’s not as humble as dish as it might first appear," Roshfeld says. "When you flip it in the frying pan, the raviolis refill themselves with all these nice, unified surprises."
