The Turkey

Americans consume 675 million pounds of turkey meat -- about 45 million turkeys -- along with stuffing, cranberries, side dishes, pies and wine every year. "The flavor is crossbred out of the turkey these days," says Colicchio. "Go to a butcher, not a supermarket, and buy a Heritage bird." Heritage turkeys are specific breeds that have a longer life span and grow at a slower rate than do turkeys bred for industrial agriculture.
